Due to extreme demand for regular processing and cut of meats, not all value-added products are available at this time. We apologize for any inconvenience.

Hot Dogs

Piedmont offers Uncured Hot Dogs using meat from your animals. Our recipe contains: Sea Salt, Spices, Evaporated Cane Syrup, Paprika, Cherry Powder (Cherry Powder, Evaporated Cane Syrup), Onion Powder, Natural Flavor (Celery Powder, Sea Salt).

No nitrates/nitrites added (only those naturally occurring).

We can make the following:

  • Beef Hot Dogs
  • Pork Hot Dogs
  • Beef/Pork Hot Dogs
  • Pork/Beef Hot Dogs
  • Lamb Hot Dogs

We require a 50 pound (green wt.) minimum. These items will be frozen when you pick up. Piedmont Custom Meats does not use any spice blends containing USDA recognized allergens, nitrates, or nitrites except those that naturally occur in a natural ingredient.

Bologna

Piedmont offers Uncured Bologna using meat from your animals. Our recipe contains: Sea Salt, Spices, Evaporated Cane Syrup, Paprika, Cherry Powder (Cherry Powder, Evaporated Cane Syrup), Onion Powder, Natural Flavor (Celery Powder, Sea Salt).

No nitrates/nitrites added (only those naturally occurring).

We can make the following, and it can be sliced or made into approximately one-pound chunks:

  • Beef Bologna
  • Pork Bologna
  • Beef/Pork Bologna
  • Pork/Beef Bologna

We require a 50 pound (green wt.) minimum. These items will be frozen when you pick up.

Currently, Piedmont Custom Meats offers:

All of our smoked products are smoked with care using natural hickory wood chips to give that perfect rich flavor. To smoke your side meat, we start by injecting the bellies with a brine mixture made with the following ingredients:

Salt, Evaporated Cane Juice, and Natural Flavor (Celery Juice Powder), Sea Salt. No nitrites or nitrates are added to our mixture (only those naturally occurring-celery juice).

You can chose to leave the bellies whole or have them sliced. The above items will be frozen when you pick up. Piedmont Custom Meats does not use any spice blends containing USDA recognized allergens, nitrates or nitrites except those that naturally occur in a natural ingredient.

Rendering
We need approximately 50 -100 pounds (green wt.) of fat to create your "white" value-added lard or tallow.

Jerky
Jerky – “Understanding the Process”
Jerky is the process of drying meat. You will get back about 33% of the meat you have cured. As an example, if we use 50 pounds of fresh round meat, you will receive about 16 pounds of finished jerky. Product packed in 2-3oz random weight packages.
